Is there a good place in Paris to immerse myself in French film souveniers/memorabilia etc. Particularly the films of Sophie Marceau, Emmanuelle Beart (lentement mon coeur!), Irene Jacob, Audrey Tatou?
Maybe some cinemas specialising in French Films?
And I know this is a silly question but where (in Paris) would I most likely encounter one of the abovelisted actresses passing by (and don%26#39;t say New York or London!)

check out www.allocine.com for what%26#39;s on where in Paris. Most of the theaters here specialize in French cinema as, well, this is France.
As for French Stars... we%26#39;ve got our fair share over here near The Bon Marche... Sandrine Kiberlain, Catherine Deneuve, Vincent Lindon and now Jamal (his fiancee has moved to the area, so he is here often).
Audrey Tatou is known to meet a pal or two at the Bar at the Lutecia. Le Bar du Croix Rouge is a popular hang out (at Croix Rouge, between St Sulpice and Sevres Babylone) at lunch time. The Sauvignon wine bar on rue de Sevres has its fair share on sunny days and the Cafe du Mairie at St Sulpice is another sure bet.
There is more going on in the 8th, I believe, but I am not familiar enough to know the comings and goings over there.

Madame Nathalie Baye (former Madame Hallyday) can be spot at La Ferronnerie, 7th, around the corner from La Cigale Recamier.
Madame Nathalie Delon, once married to Alain, shops at La Grande Epicerie at Le Bon Marche.
Isabelle Adjani happens to be at the Brasserie Lipp.

Since you like Audrey Tatou you might want to check out the cafe where Amelie was filmed. It%26#39;s on rue Lepic Metro Blanche in Montmartre. I have found the service a bit gruff but it is interesting to see and I do like the street that it is on.

Cinema is big over here, esp with France being the forth or fifth largest producer of movies worldwide. At any given moment you%26#39;ll find that a large percentage of films on show are French.
UGC Cine-Cite les Halles, one of the larger cinemas, is currently showing 20 movies and about half are French.

Even if you will not see any Filmstars in flesh the next best thing would be a visit to a Paris cinema intistution Le Grand Rex here is the website http://www.legrandrex.com/
There is a special tour all about the history of the cinema.
Also of interest is the Paris-Story on Rue Scribe near the Palais Garnier Opera. On a large 12 metres screen you will see all the history of Paris from Lutece to today.

Oh! and I was forgetting that a friend of mine, who like me is madly in love with Deneuve, actually saw her once coming out of le cafe de la mairie , place St Sulpice, he went to the cafe and some patrons told him that Catherine lived near by (dont know if that is true?) So you just never know...
