Provence isn%26#39;t really known for its cheese. There are no cow%26#39;s milk cheeses. The only widely distributed goat cheese is Banon, which is excellent, though there are certainly a number of fromagers artisanals making small quantities of goat cheese (including Brousse du Rove) which you may find in markets, and here and there in a fromagerie or at a restaurant.
The one sheep%26#39;s milk cheese I am aware of is Tome d%26#39;Arles. I kind of think there is only one commercial producer but the name escapes me. Anyway, you may find it again in the local markets and fromageries. Androuet (you will have heard of him, yes?) said of it: %26quot;It is, to my taste, one of the most delicate cheeses in existence.%26quot; Certainly if you can find it, I think you will like it.
I do recall seeing in a bookshop in Aix-en-Provence a book with the title %26quot;Fromages Fermiers en Provence%26quot; but did not look at it so I can%26#39;t tell you anything more about it.
En tout cas, je vous souhaite un bon plateau de fromages!
